love plantain and I buy a lot of it. The sad part is that when it gets
too ripe, it becomes quite useless to me. What do I do next? I toss it
into the garbage bin. Waste of plantain, waste of food, waste of money.
Not nice at all! Not nice when there are kids all around Africa
started thinking. How do I recycle overly ripe plantain? Ukwaka came to
my mind but I wanted something nice and easy…something you could enjoy
with beverages or ice-cream, something you could serve as desert and
then PLANTAIN BREAD came to my head. Bingo! I was like, hmmmm…if there
is banana bread, I sure can make bread out of plantain…even make a cake
out of it. Well, this is how the journey began…to a soft, lovely bread
that is so easy to prepare and yet, so delicious to eat. You can also

Prep time: 20 minutes
Cook time: 1 – 1 hour 10 minutes
Total time: 1 hour 30 minutes

2 very ripe plantain
80g melted butter
140g granulated white sugar
1 egg (beaten)
200g all purpose flour
1 tsp. vanilla extract
1 tsp. baking soda
Pinch of salt
Peel the plantain, cut it into small chunks and mash with a masher.
Add the butter and blend it in with a wooden spatula. Add the salt and bicarbonate of soda and mix in. Follow with the sugar.
mixing properly, pour in the beaten egg. Mix once more. Add the vanilla
essence, continue stirring. Finally sieve the flour into the mixture
and properly blend together.
the consistency of the bread mix? Good! Grease a bread pan with some
butter. I sprinkled some sugar over the butter (don’t mind me
) Pour the bread mix into the greased pan and spread evenly. Bake in a
pre-heated oven ( 350 degree Fahrenheit or 175 degree Celsius) for 1
hour to 1 hour 10 minutes. When done, that is if your tooth pick comes
out clean, set aside and allow to cool. Serve when cool.
store, wrap it up in a polythene bag or in an air tight bowl with a lid
and keep in the fridge. To keep for a longer time, put the bread in the
freezer and thaw when ready to consume.
