KFB Foodie Talk: No Tomatoes? Make Jambalaya Jollof Rice!

For our newbies, the KFB foodie talk column – handled by Dobby of Dobbysignature – is basically for ladies and ‘guys’ that are interested in learning how to cook better ;).

We
have however got a guest for today’s food lesson and its none other than lifestyle blogger, SisiYemmie.

I know tomatoes “haff
cost” but don’t worry, you don’t need fresh tomatoes for this, with
tinned tomatoe paste /tomato sauce in a can you are good go! Initially I
was making Jollof but added a bunch of other ingredients and ended up
with a spoon-licking jambalaya rice. So can we call it Jambalaya Jollof?
T’s not 100% Jambalaya and it’s not 100% Jollof. LOL.

Name this dish!
Back to how delicious this was…Bobo said “don’t serve plenty for me oh“(fitfam tinz)…as a good wife I said “Ok
and gave him a small portion. This guy went back two times to that pot!
I no blame am, na the rice wey sweet I blame. Even Tito balance well to
wack the rice. So what are the ingredients?

INGREDIENTS Tinned tomato paste- I prefer Gino because of the rich red colour Tomato Sauce-I stumbled on this one and loved it Peppers- Green, Red, Yello Sweet Corn Salt Maggi Vegetable Oil Bay Leaves Thyme Curry Black Pepper Chicken stock Basmati Rice Sausage PREPARATION

  • Chop your peppers, onion and sausage neatly.
  • Heat up your pot, add vegetable oil, sauté some of the chopped Onion, then add your tomato paste, your spices, and bay leaf.
  • Fry the tomato paste till it is cooked and it looks like small clumps, then add chicken stock and water. Allow to boil.
  • When it is boiling, add your basmati rice, lower the heat and allow to cook.
  • Don’t allow the rice to be dry before turning it off, leave a bit of sauce.
  • In another pan, now sauté the remaining onion, cut sausage and medley of peppers.
  • Add the rice to the sautéed vegetables and combine.Allow to simmer for 5 minutes and your jambalaya rice is ready!
