KFB Foodie Talk: Why go all the way to KFC, when you can make that cripsy chicken yourself :)

For
our newbies, the KFB foodie talk column – handled by Dobby of Dobbysignature – is basically for ladies and
‘guys’ that are interested in learning how to cook better ;).

We
have however got a guest for today’s food lesson – Media personality
Matse Uwatse Nnoli, she blogs at Matsecooks.com :).

 If you love KFC crispy chicken, then you will dance to the moon because
I am bringing it to your kitchen, made by you with tender loving care
and served to your loved ones with pride.
You can wink at your
boyfriend, fiancé, husband and loved ones saying, “Oh yes I made this
from the scratch”.
If by November you look
rounded and huge please don’t say it’s this recipe. Confess the truth!
Well, the maternity ward shall set you free. *hehe*


Now let’s get cooking.


Spice chicken with salt and black pepper. Rub in thoroughly and keep in
an air tight container or ziploc to marinate for 6 hours or overnight.

Measure 5 cups of cornflakes, I used Kelloggs.

Place the cornflakes in a Ziploc or polythene bag and gently crush with a rolling pin.

Make sure it is coarse like this.

Add black pepper.

Then the white pepper.

Followed by the cayenne/dried pepper and mix them together thoroughly.

In another bowl, pour a cup or a cup and half of flour and set aside.

Whisk 2-3 eggs in another bowl and set aside also.

Pre-heat vegetable oil in a pan for deep frying.

Now, coat the chicken with flour. Goooood!

Dip in egg wash nicely. Make sure you put the eggs all over it.

Press the cornflakes firmly on the chicken. Use generously.

Just like this.

Deep fry in hot oil over medium heat on both sides for 15-20 minutes.
Then drain on a paper towel. Alternatively, you can spray some oil on it
and bake in an oven. If you are a health freak. If you need to spray
and cannot find the store bough cans, pour olive oil in a properly
washed container with a spray nozzle and use.

Voila!

PS: Please use the soft broiler chicken, not the hard native fowls.
Here’s a handy printable. Crispy Chicken: The ” KFC” Way. Yields 6 Deliciously spiced chicken coated with flour, egg wash and cornflakes. Save Recipe Print Prep Time 10 min Cook Time 20 min Total Time 30 min Ingredients

  1. 6 pieces of chicken
  2. 5 cups cornflakes
  3. 1 teaspoon white pepper
  4. 1-1/2 teaspoon black pepper (for spicing the chicken and for the cornflakes
  5. 1/2 teaspoon cayenne pepper
  6. 1-1/2 cups of flour
  7. 2-3 eggs
  8. Salt to taste
  9. Vegetable oil for frying

Instructions

  1. 1.
    Spices chicken with 3/4 teaspoon of salt and 1/2 teaspoon of black
    pepper. Marinade for 6 to 24 hours to get well spiced chicken. Keep in
    the fridge not freezer.

    Crush cornflakes coarsely with a rolling pin. Then spice with 1
    teaspoon of black pepper, 1 teaspoon of white pepper and 1/2 teaspoon of
    cayenne pepper. Mix in thoroughly.
  3. 3. Pour flour into a dry bowl and whisk eggs separately in another bowl.
  4. 4.
    Rub the chicken generously with flour, then dunk in the egg wash.
    Press spiced cornflakes all over the chicken generously and deep fry.

Notes

  1. * Use fresh crispy cornflakes not the soft ones exposed to air.
